Black Bean Tacos!!

One of the dishes my mom made while she was here was Black Bean Tacos. It's so good we had it at least once a week. Since she's been gone there has been a gaping hole.... and not just in our stomachs. So I got the recipe and I think it turned out scrumptious! I like that word....scrumptious!



Meet the cast of the big show!

Chicken, onion, black beans, garlic powder, chili powder, salt, cheddar cheese, tomatoes with chilies, and finally, tortillas!


Cook about a pound of chicken all the way through. Salmonella is bad!

Then cut the chicken into cubes. Feel free to cut it up before you cook it. I just hate to touch raw chicken.....

It should look like this.

Then dice 1/2 cup of onion

In the same pan you cooked the chicken in, add the chicken back to the pan. Or if you cut your chicken up before cooking it, just go to the next step please. Thank you!

Add the diced onion to the pan.

Cook until onion is just tender.

Then add one can of rinsed and drained black beans.

Next comes 1/4 of a can of tomatoes with chilies. The recipe calls for 1/2 a small can of green chilies, but I didn't have any, so I substituted...


Then come the Spice Girls:
1 tsp garlic powder (I bet fresh pressed garlic would be good too.)

1/4-1/2 tsp. chili powder, depending on your taste. I added a whole teaspoon because I live on the edge.
It's like Momma always said,"If you're not livin' on the edge, you're taking up too much room!"


1 tsp. salt

1/2 tsp. of ground cumin is in the recipe too, but I am fresh out.

Stir all this yummy goodness up until heated through.

Now add my favorite ingredient: 1 cup of shredded cheddar cheese. I think I added a bit more. I really like cheese.

Stir until cheese is melted.

Place several small tortillas on a cookie sheet.

Spoon mixture onto half of the tortilla.

Fold over. I was able to make 5 tacos with the mixture, but I like to stuff it full.

Bake the tacos at 400 F. for about 10 minutes, or until tortillas are slightly brown.

Serve with sour cream, tomatoes, guacamole, black olives, or whatever your heart desires.
